Koshari
Koshari, typical of Egypt, is a dish ʽʽ which is much talked aboutʼʼ because of its particularity. It is in fact a mixture of lentils, pasta, rice embellished with spices perfect for vegetarians. A dish you can enjoy on every street corner in Cairo, it’s the ideal meal when you’ve got plenty of leftovers. Eating this dish can be very beneficial for the body, thanks to the presence of lentils, a legume with numerous nutritional properties. It helps strengthen the nervous system, provides energy, reduces the risk of cardiovascular disease, improves digestive comfort and, thanks to its fiber content, slows down blood sugar levels.
Ingredients
For 4 people, you need:
- Olive oil
- 100 g rice
- 100 g lentils
- 200 g macaroni
- 200 ml vegetable stock
- 2 cloves garlic
- 20 g chickpeas
- 2 onions
- 1 teaspoon cumin
- 1 bay leaf
- salt and pepper
- 125 g crushed tomatoes
- 2 tablespoons spice mix
- 1 teaspoon chili pepper
- 1 tablespoon red wine vinegar

Preparation of Koshari
- Fry the rice for about 2 minutes in a saucepan with 2 tablespoons of oil. Add the vegetable stock and cook for 15 minutes.
- Rinse the lentils in cold water and cook in another pot of water for 30 minutes. Add the garlic, cumin and bay leaf, season with salt and simmer for a few more minutes. After cooking, strain the lentils through a sieve.
- Cook the macaroni al dente in a saucepan.
- Cook the chickpeas in a saucepan filled with boiling water. When ready, strain into a colander and rinse under cold water.
- Heat 2 tablespoons of olive oil and 1 chopped onion in a saucepan for the sauce, add a clove of garlic, the crushed tomato, the spice mix and the chili pepper, stir, add salt and pepper to taste, add the vinegar and simmer for 20 minutes.
- Heat the oil and fry the chopped onions. The onions are cooked when caramelized.
- Mix the rice, lentils and macaroni in a bowl, add the chickpeas and drizzle with the sauce. Sprinkle with fried onions and serve.
